Akutaq
By Wendy Parent
Akutaq is Eskimo ice cream. It is made with fish, berries, Crisco, Wesson oil, and sugar. You have to boil the fish for 1 hour, with a little bit of salt. After the fish is boiled, take it out of the water, and let it cool. Once it is all the way cooled, take out all of the bones. Once you have taken all the bones out, squeeze the liquid out of the fish, and put the fish in a bowl or container. Then you fluff up the fish.
Put as much Crisco that you have fish in a large bowl. Start to beat the Crisco, then stop when the Crisco is all the way creamy. Once you have done that add a little bit of fish in at a time, and mix the fish and the Crisco really good. Before you add the Wesson oil, you have to make sure that there are no lumps of fish in the bowl. If there is, you have to keep mixing the Crisco and fish. Finely, after all the lumps are gone, you add a little bit of Wesson oil to the mix. Just enough so that it isn’t as dry. Beat it really well, so that there aren’t any dry spots.
Once you are done with all of that, add the sugar. Don’t put too much because if you have blue berries, then it would be really sweet. Put as much sugar as you want to. Beat the mixture until you can’t feel anymore sugar in it. Once you have done the sugar, put the berries in. You can put as much berries as you want to, it doesn’t matter what kind of fish or berries you use to make Akutaq.
